Instructions
- Melt the butter in a large pot.
- Add the onions and salt, and begin to sweat covered.
- Once the onions are soft, remove lid, turn up heat and caramelize.
- When the onions are golden brown, add the Calvados and reduce to almost au sec.
- Add the chicken stock and bring to a boil. Cook for 10-15 minutes.
- Portion the soup in to gratin dishes over a slice of baguette and cover top with grated cheese.
- Place into the broiler to melt. Carefully watching so that the cheese does not burn. Remove from once cheese has started to bubble.
- Remove from oven and let cool to enjoy.
