- preheat your oven to 450.
- in a medium pan, heat. 1 tbsp of oil and fry your prosciutto. place fried prosciutto on a paper towel lined plate, set aside.
- slice buns in half and take 1 tbsp of the pesto and spread it on the bottom half of the bun.
- next, take 3 slices of tomato and place on top of the pesto layer.
- take 3 slices of mozzarella and place on top of the tomatoes.
- take both sides of the ciabatta and place in the oven on a sheet tray with a cooling rack - just until the mozzarella is warm and melty.
- while the buns are in the oven, take a small nonstick pan and on medium to high heat.
- take 1 tbsp of pesto and add it to the pan. warm for 2 minutes.
- lower the heat, crack your egg into the pesto and fry your egg with the pesto. 4-5 minutes. careful not to overcook your egg. you still want it to be runny.
- once the mozzarella has melted, take sandwich out of the oven and onto a serving plate.
- add your fried egg on top of the melty mozzarella, add fried prosciutto on top of the egg.
- top the sandwich with the top side of the ciabatta.
- enjoy immediately.
