Ingredients
  • ciabatta roll, 1

  • basil pesto, 2 tbsp

  • beefsteak tomato, sliced

  • mozzarella, sliced into rounds

  • prosciutto, 2 slices

  • egg, 1 each

Instructions
  1. preheat your oven to 450.

  2. in a medium pan, heat. 1 tbsp of oil and fry your prosciutto. place fried prosciutto on a paper towel lined plate, set aside.

  3. slice buns in half and take 1 tbsp of the pesto and spread it on the bottom half of the bun.

  4. next, take 3 slices of tomato and place on top of the pesto layer.

  5. take 3 slices of mozzarella and place on top of the tomatoes.

  6. take both sides of the ciabatta and place in the oven on a sheet tray with a cooling rack - just until the mozzarella is warm and melty.

  7. while the buns are in the oven, take a small nonstick pan and on medium to high heat.

  8. take 1 tbsp of pesto and add it to the pan. warm for 2 minutes.

  9. lower the heat, crack your egg into the pesto and fry your egg with the pesto. 4-5 minutes. careful not to overcook your egg. you still want it to be runny.

  10. once the mozzarella has melted, take sandwich out of the oven and onto a serving plate.

  11. add your fried egg on top of the melty mozzarella, add fried prosciutto on top of the egg.

  12. top the sandwich with the top side of the ciabatta.

  13. enjoy immediately.
