Ingredients
  • 1 bunch of ramp leaves, or less depending on your flavor preference, (6) is a good amount if making this for the first time

  • 1/3 cup parsley leaves roughly chopped

  • 3 anchovy filets

  • 2-3 tbsp freshly squeezed lemon juice

  • 1 tsp dijon mustard

  • 1 egg yolk

  • few dashes of Worcestershire sauce

  • few dashes of Tobasco

  • 1/2 clove of garlic

  • 1/4 cup of grated parmesan cheese

  • 1/2 cup of neutral oil, canola

  • 2 big pinches of kosher salt

  • more salt and pepper to taste

Instructions
  1. In a small blender or jar (depending on what you're using), add all your ingredients except the oil.

    Optional, but recommended: add a small splash of water before blending. This helps keep the dressing from getting too thick once the oil goes in.

  2. Blend everything with an immersion blender (except the oil) until mostly smooth.

  3. While continuing to blend, slowly drizzle in the oil in a thin stream. Blend until the dressing is completely smooth and emulsified—you’ll notice the color lighten slightly, which means it’s emulsified properly.

  4. Taste and adjust with more salt or pepper if needed.

  5. Store in an airtight container in the fridge for up to a week.
