Classic French Onion Soup

Ingredients
unsalted butter, 4 ounces
yellow onions, 4lbs, sauté sliced (between 1/8 inch and ¼ inch in width)
salt, 1 tbsp
¼ cup calvados or brandy
chicken stock, 48 fl oz, warmed
Gruyere cheese, grated
Baguette, sliced and toasted
Instructions
Melt the butter in a large pot.
Add the onions and salt, and begin to sweat covered.
Once the onions are soft, remove lid, turn up heat and caramelize.
When the onions are golden brown, add the Calvados and reduce to almost au sec or until nearly dry and over 50% reduced.
Add the chicken stock and bring to a boil. Cook for 10-15 minutes.
Portion the soup into individual gratin dishes over a slice of toasted baguette and cover the top with grated cheese.
Place into the broiler to melt. Carefully watching so that the cheese does not burn. Remove from once cheese has started to bubble.
Remove from oven and let cool to enjoy.
