An heirloom tomato is a type of tomato that has been grown for at least 50 years in a family or community and was introduced before 1940.

Alone, heirloom tomatoes are delicious but I like to enjoy them on toast for a mid-day snack. Other times, I enjoy them with breakfast in the morning with some soft scrambled eggs.

For this recipe it’s simple, slices of heirloom on top of creamy silky burrata, then top it off with some high-quality olive oil. You likely have the ingredients for this recipe, and if not, you'll probably want to get them for future use.

Ingredients
  • heirloom tomato,1, sliced as rounds, 1/4 in thick

  • olive oil, for garnish

  • burrata, 2oz

  • lemon juice, to taste

  • salt and pepper, to taste

  • sourdough slices

Instructions
  1. take the tomato and slice it into 1/4 inch thick rounds and set on a plate or mixing bowl.

  2. season the tomatoes with olive oil, lemon juice, salt and pepper. let the mixture marinate the tomatoes for 5 minutes. set aside.

  3. while the tomatoes sit in the marinade mixture, take a medium sized pan, heat a drizzle of olive oil and toast the sourdough.

  4. once the sourdough has finished toasting, place on a plate and let cool for a few minutes.

  5. once cooled, take tomato slices on sourdough and season with more salt and pepper if necessary.

  6. add burrata on top of each slice. season the burrata with a pinch of salt and pepper.

  7. finish with a drizzle of olive oil.
