Ingredients
1 Cocktail
  • 2 oz mezcal

  • ¾ oz fresh lime juice

  • ½ oz fresh lemon juice

  • ¾ oz simple syrup (1:1 sugar to water)

  • 1 egg white (or ½ oz aquafaba for vegan option)

  • 2–3 dashes Angostura bitters (for garnish)

  • Ice

Instructions
Method
  1. Dry shake: Add mezcal, citrus juices, simple syrup, and egg white to a shaker. Shake without ice for 10–15 seconds to emulsify.

  2. Shake with ice: Add ice to the shaker and shake again until chilled, about 15 seconds.

  3. Strain into a chilled coupe glass.

  4. Garnish: Add 2–3 dashes of Angostura bitters on top of the foam. Use a toothpick to drag the drops into a simple pattern if desired.

Notes
  • Adjust sweetness by adding a touch more or less simple syrup.

  • For a brighter profile, swap lime juice for all lemon, or vice versa.

  • Aquafaba creates a similar silky foam without egg.
